In the thick of winter, nothing is cozier than this easy winter simmer pot recipe.

A simmer pot is seriously the most amazing way to get beautiful and strong fragrances throughout your home. I have used candles and diffusers and nothing beats a simmer pot in potency and the best part is it could not be easier to make. Your home will smell amazing in minutes!

There are some amazing benefit to simmer pots. Not only are they easy and cheap to make, they are very low waste or zero waste, if you compost the ingredients afterwards. They also make wonderful gifts. Place all the ingredients into a mason jar and add a sticker with instructions on the top and you have a very thoughtful budget friendly gift.

Easy Winter Simmer Pot Recipe

There are so many ways to combine ingredients but the below recipe focuses on primarily winter scents.; that includes cinnamon, apples, rosemary, cloves and citrus. To keep with tradition use oranges but I only had lemons so I made do and it still smelled incredible.

Ingredients

  • Cinnamon sticks
  • Apple
  • Oranges/ Lemons
  • Rosemary
  • Whole cloves
  • Vanilla extract
  • Water

STEP 1:

Gather your ingredients and cut your apples and citrus into slices or wedges. Use a whole apple and orange to keep the scent lingering for longer.

Step 2:

Fill a medium sized pot with about 4 cups of water and turn the stove onto medium-high heat. To be honest I eyeballed the amount and just filled this pot about half way. As long as you have enough to fully cover all your ingredients you are good to go. For reference my pot is about a 2 qt pot, gifted to me by the sweetest great aunt who is no longer with us. She had so many beautiful vintage kitchen items. I highly recommend thrifting, if not this one looks pretty similar.

Step 3:

Once you have a rolling boil reduce the heat to a simmer and add your ingredients into the pot. Thats seriously it. Leave your stove on simmer all day if you’d like and just replenish your water once you see it starting to get low.

A quick and easy post today to give you some inspiration in your winter homemaking. I adore keeping a simmer pot going when I know I’m going to be home all day or I’m having guests over. I usually won’t start a simmer pot on heavy cooking days only because I need the stove top real estate. Let me know how much you love the smell of your home after creating one!

Tried some homemade finger paint today with little Tried some homemade finger paint today with little A. She is 18 months old and still occasionally tastes her art supplies. She enjoyed this one and didn’t try to taste it too much. 👌🏼 Super easy to make but it’s a sticky one; had to hose her down afterwards.

The flower patch is really starting to crank out b The flower patch is really starting to crank out blooms. Things I’ve learned so far.
1. I have too many bed hogs/ slow growers in a very limited amount of space.
2. The dahlias, celosia and snapdragons have a longer maturity time and I should have started them well before the rest.
3. Rabbits like to eat baby dahlias and I suspect sunflowers too.
4. I should have used a fish emulsion to fertilize. The plants feel smaller than they could be.
5. Planting the sunflowers and dahlias on the north side of the patch made sense because they grow the tallest, but it’s also the side of the patch that gets the most shade which is no good.

That’s all for now. Really loving this process. 💐

My first hand at making everyday loaves of bread. My first hand at making everyday loaves of bread. I’ll admit I’ve avoided sourdough bread because it intimidates me and it just seems like a lot of work. I’ll jump in eventually but for now this yeast bread recipe gives that beautiful artisanal feel and is so so easy. And well to get high quality english muffins at the store it’s $5 for a pack of 6. It’s so much cheaper to make them yourself. Let me know if you try either of these.

EVERYDAY LOAF
- 3 cups (450g) flour , bread or plain/all purpose
- 2 tsp instant or rapid rise yeast (for active dry yeast )
- 2 tsp cooking kosher salt
- 1 1/2 cups (375 ml) very warm tap water (130°F)
- 1 1/2 tbsp flour , for dusting
Directions
1. Mix flour, yeast and salt in a large bowl. Add water, then use the handle of a wooden spoon to mix until all the flour is incorporated. Dough will be wet and sloppy – not kneadable, but not runny like cake batter. Adjust with more water or flour if needed for right consistency
2. Cover with cling wrap or plate, leave on counter for 2 – 3 hours until it doubles in volume, it’s wobbly like jelly and the top is bubbly. If after 1 hour it doesn’t seem to be rising, move it somewhere warmer.
3. Put dutch oven in oven with lid on (10” or larger). Preheat to 450°F 30 minutes prior to baking.
4. Sprinkle work surface with 1 tbsp flour, scrape dough out of bowl. Sprinkle top with 1/2 tbsp flour. Using a dough scraper or anything of similar shape (cake server, large knife, spatula), fold the sides inwards (about 6 folds) to roughly form a roundish shape.
5. Slide a large piece of parchment/baking paper next to the dough, then flip the dough upside down onto the paper (ie seam side down, smooth side up). Slide/push it towards the middle, then reshape it into a round(ish) shape.
6. Remove hot dutch oven from oven. Use paper to place dough into pot, place lid on.
7. Bake 30 minutes covered, then 12 minutes uncovered or until deep golden.
8. Cool on rack for 10 minutes before slicing.

Visited a u-pick strawberry field today and loaded Visited a u-pick strawberry field today and loaded up on some beautiful fresh strawberries. It felt so good to see a farm stand in action, it fuels my dreams and keeps me focused on creating my own one day. The season ends in April so I’ll be back to collect more berries soon. My plan is to pick enough to freeze for smoothies, can strawberry jam, dehydrate some to add into granola and make some fresh treats too. 🍓

It was such a big deal to me to practice how to water bath can and for it to come out successful my first time. Water bath canning intimidated me for a while.
